Everyone knows Moroccan couscous, but not everyone is familiar with pigeon pastilla. Yet this dish is very popular in Morocco. Discover it for yourself and consider renting a car during your stay in Morocco to go and enjoy it in a local restaurant.
Although less internationally known than couscous and chicken tagine with prunes, pigeon pastilla is one of the main dishes of Moroccan cuisine. Usually served as a starter, pigeon pastilla is a sweet and savory dish, similar to a turnover.
A sweet and savory recipe
Pigeon pastilla consists of sheets of filo pastry (for the “pastry” shell), pigeon (obviously), but also eggs, onions, oil, almonds, ginger, cinnamon, coriander, caster sugar, saffron, parsley, orange blossom water, salt, and pepper (for the pastilla filling). The pastilla is then covered with icing sugar to accentuate the sweet taste and for decoration.
The traditional pastilla is made with pigeon, but there are various variations on the recipe, such as fish or chicken.
A little tip from your car rental agency in Morocco: Rent a city car to go and eat a pigeon pastilla at a restaurant during your stay in Morocco.
